Asparagus Season!
I've been eating lots of asparagus lately - I love the abundance of this in the spring/early summer - it's a pleasant, early sign that the bounty of summer gardens is on the way. For this meal, I roasted some asparagus with oil, salt & pepper - placed it on top of a bed of creamy polenta and topped it all off with a few poached eggs. Divine!
