Gnocchi Love

I'm really far behind on updating my blog posts. This is a dish that I made at the end of March - how can you go wrong with gnocchi, bacon and spinach? A little Parmesan cheese on top and a glass of wine on the side - and I'm a happy camper.

  2. I don't really have a recipe - but it would be super easy to replicate. Just brown up some bacon (while it's browning, boil your gnocchi until it rises to the top of the water). Remove bacon from the pan & reserve. Wilt your spinach, add your gnocchi & lightly brown. Add back the bacon and top with parmesean cheese. Voila!
