Homemade Comfort in a Bowl

With all this cold weather, I've been craving comfort food. What's more comforting than pot pie? I took a tip from one of my recent evenings at Inspiration Cafe - rather than making a true "pot pie", why not make all the fillings and some biscuits or rolls on the side?

This turned out to be a great creation - I took some leftover turkey, homemade chicken stock, mixed veggies (a combo of frozen vegetable medley & fresh potatoes, onions, carrots and broccoli), cream of chicken soup & a mixture of herbs (parsley flakes, oregano, thyme & herbs de Provence). Let it simmer until thickened, top with some freshly baked crescent rolls and voila - homemade comfort in a bowl!
