Sunday Night Stuffed Squash

I love to spend time cooking a nice dinner on Sunday evening - it's a good way to relax & unwind in preparation of a busy week ahead.
Tonight's dinner started with a salad of fresh lettuce from mom & dad's garden with a simple vinaigrette.
The main course was a roasted stuffed zucchini - the stuffing was a blend of rice & sauteed vegetables (onion, pepper, tomato and mushrooms).
Top that off with a nice glass of Proseco - and I would say that it was a pretty perfect dinner!


An Evening with Gianna!

I was so excited when Catana & John asked if I would be willing to watch Gianna for them on Saturday night - of course, I would love to spend time with this little princess.






Birthday Boy!

On Saturday, I celebrated the one year anniversary of adopting Otis. I think he enjoyed his special day - a little bit of sunbathing, a little bit of snuggling while I read a good book and some yummy treats (rice & wet food and a peanut-butter Frosty Paw).
I'm so lucky to have him in my life!







Go Cubs Go!

Meghan was in town from Alaska - what better reason to get roof-top tickets for the Cubs-Cards game? We had a fun day at the game, followed by some more food, drinks and good times in Wrigleyville and Old Town!

Weekend Omelette

A perfect Saturday morning breakfast - an omelette with broccoli, turkey and swiss.

The San Francisco Treat

Went to San Francisco for work last week - it was a quick trip, but we managed to have some fun! Our first night, we went to dinner in Belden Alley and then went to the Gold Dust lounge for cocktails & music. Our second night, we had a fabulous dinner at Scoma's on Fisherman's Wharf, followed by a night of debauchery with me & the guys.

Rosie the Riveter & the Revolution

For a late birthday celebration, I planned an evening at Ravinia (the Swell Season was fabulous!) Erin came up from Champaign for the day and got up to Chicago in time to have lunch with Becky and I - where did we go?
Do you even have to ask?
It was a simple choice - Revolution Brewery! Gotta love their bacon fat popcorn and their newly brewed hibiscus ale - Rosie the Riveter!

Farmer's Market Squash Stir-fry

I bought some zucchini and patty-pan squash at the Green City Farmer's Market - and with it made this yummy stir-fry along with a bed of jasmine rice.

Spicy Lentil Curry & Naan

I made this lentil dish a few weeks ago - it was a simple stew of lentils, diced tomatoes, onion, garlic and curry spices. Yum!
