You Say To-may-to, I Say To-mah-to

I love the abundance of fresh tomatoes in the summertime.

I went to a 4th of July BBQ yesterday and make this dish of "drunken tomatoes". It consisted of grape tomatoes soaked overnight in vodka (I used tropical fruit infused vodka). After a night of soaking, you take the tomatoes & mix them with lemon zest, lemon juice, salt, fresh dill and a dash of olive oil. Yum!


And then for dinner tonight, I had another favorite tomato dish - cottage cheese & tomato, with a dusting of freshly ground pepper. It was perfect for a day like today when it was so hot and I didn't feel like eating much. So refreshing!
